Crab Roe Bisque Recipe

Soup mixed from shellfish honorably receives the name ‘bisque,’ rather than ‘soup’ and many chefs actually leave a shell or two from the crustacean in the broth as a signature to the dish. Crab Roe Bisque takes the female crab’s ripe egg masses, bright orange in color, and places them in a bisque, along with actual crab meat. The extra-salty roe enhances the crab meat’s succulent buttery taste.

Shop for the finest ingredients. 4 tbsp. unsalted butter, ¼ cup diced yellow onion, 1 small carrot diced, 2 celery stalks diced, ½ cup white wine, ¼ cup brown rice, 2 tbsp. tomato puree, 3 tsp. Old Bay, ¾ tsp. Worcestershire Sauce, pinch nutmeg, 2 cups fish stock, 1 lb. jumbo lump crab meat, ½ cup crab roe, ½ cup heavy cream, ½ cup sherry, and parsley.

  • Melt the butter in a saucepan and add all the vegetables. On medium heat, sauté the mix for 5 minutes until you notice a slight golden brown, which will give an added sweetness to the “earthy” presence of the vegetables.
  • Introduce the wine and then whisk in the fish stock, rice, tomato puree, Worcestershire Sauce, Old Bay, and nutmeg. Let the ingredients intertwine and simmer. The umami flavor of Worcestershire Sauce will combine with the brininess of the fish stock and tangy presence of the tomato. Allow 15 minutes for this stage.
  • In a blender, puree all the ingredients carefully. Fill the canister about halfway to avoid any crazy mishaps. Then, let the blended bisque simmer, while adding the crab meat and roe. Stir in the heavy cream and let the bisque settle for several minutes. Lastly, stir in the sherry and then divide into serving bowls and adorn the top sparingly with parsley.

Making Crab Roe Bisque takes the salty sweet of the Maryland Blue Crab to a level of sophistication with heavy cream and hint of buttery nuttiness. Bon Appetit!
